We source Organic Green Cardamom Pods from Guatemala and pack it in a Biodegradable, resealable, stand up paper bag. Green Cardamom belongs to the Zingiberaceae family which also includes Turmeric, Galangal and Ginger. It is native to India and Sri Lanka. Green Cardamom Pod is bright green in colour with approximately 10 to 12 tiny dark-brown sticky seeds inside. It has rich and complex flavour – slightly sweet, exotic, floral and spicy with citrus undertones and a strong pungent aroma. Green Cardamom is popular in Indian, Middle Eastern and Scandinavian cooking. Green Cardamom Pods enhance both savoury and sweet flavours and compliments both meat and vegetables. Use the whole pod or bruise the pods slightly to release fresh taste and flavour. It is ideally used in recipes with some liquid and slow cooking for the Cardamom to infuse. The pods can be removed from the dish before serving. Green Cardamom is used as savoury flavouring in casseroles, chicken, curries, pastries, pâtés, pies, purées, rice, sauces, soups, stews and with meats, seafood and vegetables. For sweet flavouring it is used in apple pie, custard, ice cream, rice pudding or sprinkle them over a fresh fruit salad. It pairs well with apples, oranges, pears, sweet potatoes. Green Cardamom can also be added to beverages for a fragrant twist. Make warming chai tea by adding Cardamom Pods, ground Star Anise and Cinnamon to tea and milk.
